
Chicken Soup For The Soul
heart warming soup for the winter months. Have it chunky or blitz it for a smooth soup
Ingredients
Left over chicken from roast or 2 cooked chicken breast
- 2 carrots
- 2 sticks of celery
- 2 white onions
- 1 L of bone broth or vegetable stock
- 30 g of butter
- 25 g flour (if wheat free use rice flour)
Preparation
Melt butter in a pan and fry onions
add chopped carrots and celery and fry in pan for 3-5 mins
Add flour and toss all veg in flour.
Now add bone broth or veg stock and bring to the boil.
Simmer for 10 mins or until vegetables are cooked
Add chicken and bring back to a simmer
Salt and black pepper to taste
You can blend this or leave it whole. I prefer leaving it whole. It is a great comfort food for the winter and it freezes well.
